    ⅔ cup (150 mL) pizza sauce

    ⅔ cup (150 mL) korma curry base

    1 (14-16 inch) thin crust pizza base, partially cooked

    1 ½ cups (375 mL) mozzarella cheese, shredded

    ½ cup (125 mL) whole red lentils, cooked and drained well

    ½ cup (125 mL) cauliflower rice

    2 Tbsp (30 mL) pickled okra, sliced

    ¼ cup (60 mL) plain Greek yogurt

    ¼ cup (60 mL) Persian cucumbers, grated

    1 Tbsp (15 mL) cilantro, minced

    ½ tsp (2 mL) ground coriander

    ½ tsp (2 mL) cumin

    2 Tbsp (30 mL) parsley, minced


Directions

  1. Preheat the oven or pizza oven to 500°F (260°C).
  2. Spread pizza sauce and korma sauce evenly over the pizza base.
  3. Sprinkle the pizza with cheese.
  4. Cover pizza evenly with lentils, cauliflower, and okra.
  5. Bake in oven for 6-7 minutes until golden brown.
  6. While pizza is baking, mix yogurt, cucumbers, cilantro, coriander, and cumin in a bowl, to make raita.
  7. Garnish hot pizza with parsley and a drizzle of raita.
