Korean Burger

    1 lb (500 g) lentils, whole red, cooked, pureed

    1 lb (500 g) mushrooms, roasted, pureed

    1 lb (500 g) ground beef

    3 Tbsp (45 mL) ginger, ground

    ¼ cup (60 mL) garlic, chopped, sautéed

    3 Tbsp (45 mL) crushed red pepper flakes

    ¼ cup (60 mL) low-sodium soy sauce

    ½ cup (125 mL) scallions, chopped

    3 Tbsp (45 mL) dark brown sugar

    1 quart (1 L ) kimchi, roughly chopped

    1 quart (1 L) prepared coleslaw

    3 cups (750 mL) kewpie mayo

    ½ cup (125mL) Sambal Olek

    14 burger buns


Directions

  1. Combine pureed lentils and mushrooms with ground beef.
  2. Add ginger, garlic, red pepper flakes, soy sauce, scallions, and brown sugar.
  3. Form 14 4 oz patties.
  4. Grill on a flat top to desired burger doneness.
  5. While the patties are cooking, in a mixing bowl combine kimchi and coleslaw.
  6. In a separate bowl, whisk together mayo and chili sauce until homogenous.
  7. To build burger, top bun with a patty, ½ cup (125 mL) kimchi slaw, and 2 oz of spicy kewpie mayo.
