Lentil & Chickpea Salad with Creamy Lemon Yogurt Dressing

Directions

  1. In a jar or container with tight fitting lid, add dressing ingredients. Replace lid and shake.
  2. Then, in a large bowl, toss together chickpeas, lentils and dried cherries. (Everything can be done ahead up to this point).
  3. When you are ready to serve, pour the dressing over the chickpea mixture and toss. Then stir in the cilantro. Season to taste with salt and pepper.

Ingredients

1 cup chickpeas, cooked

1½ cups green lentils, cooked

¼ cup dried cherries

¼ cup cilantro, chopped

For the Dressing

1 lemon, zest and juice

¼ cup yogurt

¼ cup olive oil

1 tbsp dijon mustard

salt and pepper to taste
