Lentil Ghapama (Armenian Stuffed Squash)

Ghapama is a a traditional Armenian dish of stuffed pumpkin, typically served around the Christmas season. Our version uses acorn squash and a blend of lentils, beef, and rice with aromatic additions of cinnamon, Baharat, and dried apples.

    5 acorn squash

    2 ½ cups (625 mL) split red lentils, dry

    2 ½ cups (625 mL) brown rice, dry

    2 Tbsp (30 mL) cinnamon, ground

    ⅓ cup (75 mL) Baharat

    1 tsp (5 mL) salt

    10 cups (2.5 L) water

    1 ¼ lb (625 g) ground beef, browned

    1 ¼ cup (310 mL) dried apples, diced

    ½ cup (125 mL) peanuts, unsalted chopped


Directions

  1. Preheat oven to 350°F (180°C).
  2. Cut the top off acorn squash and scoop out guts. Set aside.
  3. Cook lentils, rice, cinnamon, Baharat, and salt in water until tender. Mix with beef, diced apples, and peanuts.
  4. Coat inside of squash with oil and fill with lentil mixture. Cover squash with its top and cook in oven for 45 minutes. The flesh of the squash should be tender.
  5. Carefully cut squash in half and serve each half with filling while warm.
