1/2 cup + 2 Tbsp (105 mL) canola oil
0.4 lb (200 g) Halloumi cheese, sliced
3/4 cup (175 mL) diced cucumber
3/4 cup (175 mL) thinly sliced red onion
2/3 cup (150 mL) diced red pepper
1 (15 oz/400 mL) can chickpeas, drained and rinsed
1/2 tsp (2 mL) oregano
1/2 tsp (2 mL) basil
1/2 tsp (2 mL) marjoram
1/3 cup (75 mL) red wine vinegar
1/2 tsp (2 mL) salt and pepper
3 cups (750 mL) cooked whole red lentils
