    5 cups (1.25 L) brown rice, cooked

    5 cups (1.25 L) whole red lentils, cooked with sun dried tomatoes and roasted garlic cloves

    8 cups (2 L) baby kale, roughly chopped

    6 cups (1.5 L) roasted mushrooms, roughly chopped

    2 cups (500 mL) green apple, small dice

    2 cups (500 mL) corn kernels

    2 cups (500 mL) sun dried tomatoes, halved

    5 cups (1.25 L) firm tofu, medium dice

    10 oz (284 mL) chipotle aioli


Directions

  1. To plate this dish, prepare a base of brown rice, lentils, kale, and roasted mushrooms divided equally among 10 shallow bowls. Add equal amounts apple, corn, and sun dried tomatoes.
  2. In a mixing bowl, toss tofu in chipotle aioli and finish each bowl with ½ cup (125 mL) tofu.
