Steamed or baked sweet potato with all the toppings like sautéed spiced peppers and onions, ground turkey, lentils, sour cream, lime, cheese, and green onions (serve over baked potato or potato cubes)

Directions

  1. Preheat oven to 400°F (200°C).
  2. Poke holes in sweet potatoes and bake in oven for 45 minutes.
  3. In a sauté pan, heat oil over medium to high heat. Add bell peppers and onions. Cook until onions begin to caramelize, then add garlic, cumin, smoked paprika, and cayenne and stir well.
  4. Add lentils and turkey and cook until turkey is browned and lentils absorb the spices.
  5. In a small mixing bowl, combine sour cream, lime juice, and cucumber. Mix well to make a crema.
  6. When potatoes are cooked, remove from oven and slice potatoes lengthwise down the middle. Scoop out some of the middle to make a bowl shape.
  7. Fill potatoes with lentils and turkey mix, top with ¼ cup (60 mL) cheese and ¼ cup (60 mL) green onions. Add a dollop of cucumber sour cream on top and serve hot.

10 each large sweet potatoes, scrubbed

1 Tbsp (15 mL) canola oil

1 cup (250 mL) red bell pepper, diced

2 cups (500 mL) yellow onion, diced small

½ cup (125 mL) garlic, minced

2 tsp (10 mL) cumin

2 tsp (10 mL) smoked paprika

1 tsp (5 mL) cayenne

½ lb (250 g) whole red lentils, cooked

1 lb (500 g) ground turkey

2 ½ cups (625 mL) sour cream

2 tsp (10 mL) lime juice

½ cup (125 mL) grated cucumber

2 ½ cups (625 mL) low-fat Mexican cheese blend

2 ½ cups (625 mL) green onions, thinly sliced
