These make for a quick breakfast, healthy snack, or even a replacement for that less nutritious and sugary baking - they're that good!

Directions

  1. Preheat oven to 375˚F (190˚C). Line six muffin cups with papers.
  2. In a large bowl, mix together oats, raisins, pumpkin seeds, cinnamon, and salt.
  3. In a medium bowl, whisk together lentils, egg, butter, and maple syrup. Add milk.
  4. Stir wet ingredients into dry and mix thoroughly.
  5. Use an ice cream scoop to evenly fill muffin cups to the top.
  6. Bake for 20-23 minutes until slightly risen and dry on top.
  7. Remove to a rack and let cool. Serve warm, with maple syrup and fresh fruit.

1 1/2 cups (375 mL) large flake oats

1/ 2 cup (125 mL) raisins or other dried fruit

1/4 cup (60 mL) pumpkin seeds or chopped nuts

1/2 tsp (2 mL) ground cinnamon

pinch, salt

1/2 cup (125 mL) cooked split red lentils

1 large egg

2 Tbsp (30 mL) melted butter or canola oil

1 Tbsp (15 mL) maple syrup

1/2 cup (125 mL) whole milk
