Slow-Cooker Lentil Sloppy Joes

The classic sloppy joe has always been a favourite of kids and adults alike. This recipe combines an old standby with the nutrition of lentils and the convenience of cooking in your slow-cooker!

    3 Tbsp (45 mL) canola oil

    1 onion, diced

    1 red bell pepper, diced

    1 carrot, diced

    3 garlic cloves, minced

    2 Tbsp (30 mL) chili powder

    1 tsp (5 mL) ground cumin

    1 1/2 cups (375 mL) green lentils

    1 (28 oz/796 mL) can crushed tomatoes

    1/4 cup (60 mL) ketchup

    2 tsp (10 mL) maple syrup

    2 tsp (10 mL) Dijon mustard

    2 tsp (10 mL) tamari or soy sauce

    to taste, salt and pepper

    grated cheddar cheese (optional)


Directions

  1. Heat oil in a large skillet over medium-high heat. Stir in diced onion, red pepper, and carrot. Saute for 5 minutes, until vegetables are slightly softened.
  2. Stir in garlic and spices. Cook for another 2 minutes. Remove skillet from heat.
  3. Add cooked vegetables along with remaining ingredients and 1 1/2 cups (375 mL) water into a 4 or 5-quart slow cooker. Cook for 4 hours on high, or 8 hours on low, until lentils are tender.
  4. Season to taste with salt and pepper. Serve on toasted buns and top with grated cheddar cheese.
