Directions

  1. In the bowl of a food processor, add lentils, sweet potato, and flour. Pulse on and off 10-15 times to break up the lentils and mix the flour through.
  2. Transfer to a mixing bowl and add mushrooms, miso, paprika, oregano, pepper, garlic and lemon.
  3. Working with your hands, create a paste which evenly incorporates all the ingredients. Be sure to not destroy all of the lentil structure. If the mix is still too wet, add more flour as needed.
  4. Allow mixture to rest for 15-20 minutes, prior to rolling into balls and forming patties.
  5. In a large non-stick pan over medium heat, cook patties in a small amount of the oil of your choice.
  6. Cook for 3-5 minutes on the first side, until nicely browned and crispy. Carefully flip and cook for an additional 3 minutes. Be sure to keep fat in the pan light but still present.
  7. Finish each patty with cheese to melt if preferred.
  8. To build sliders, add patty to the bun, top with baby arugula, and finish each with a dollop of marmalade.
  9. Chefs tip: Other optional toppings could include: red pepper jelly, preserved lemon minced and folded through mayo, thinly sliced green apples, etc.

4 cups (1 L) whole red lentils, cooked

½ cup (125 mL) sweet potato puree

½ cup (125 mL) all-purpose flour

1 lb (500 g) brown button mushrooms, roasted and chopped

¼ cup (60 mL) miso paste

1 tsp (5 mL) smoked paprika

1 tsp (5 mL) dried oregano

1 tsp (5 mL) black pepper, fine ground

¼ cup (60 mL) garlic paste

2 Tbsp (30 mL) lemon juice

30 slider burger buns

2 cups (500 mL) pepper jack cheese, shredded (plant-based for vegan option)

1 cup (250 mL) orange marmalade

2 cups (500 mL) baby arugula
