Blini with Black Lentil “Caviar”

Spiced lentils make a tasty, economical alternative to pricey caviar – and look surprisingly similar on tiny pancakes with a dollop of crème fraiche. The recipe is easily doubled to feed a larger crowd.

Blackened Chicken & Creole Lentils

8 8 skinless chicken breasts or thighs ¼ cup (60 mL) Cajun spice blend (or use recipe below) 2 Tbsp (30 mL) canola oil –Lentils 2 Tbsp (30 mL) canola oil 1 cup (250 mL) thinly sliced onion 2 cups (500 mL) thinly sliced mushrooms 1 Tbsp (15 mL) tomato paste 2 tsp (10 mL)

Beef & Lentil Samosas

Beef and brown or green lentils go wonderfully together as a filling for crisp samosas. These are traditionally fried, but could alternatively be baked; set on a rimmed, parchment-lined sheet, brush with oil and bake at 425˚F (220˚C) for 20-30 minutes until golden.
