    DRESSING:

    1/ 3 cup (75 mL) canola oil

    3 Tbsp (45 mL) fresh lime juice

    2 tsp (10 mL) whole grain mustard

    2 tsp (10 mL) maple syrup

    1 tsp (5 mL) lime zest

    to taste, salt and pepper

    SALAD:

    1 cup (250 mL) cooked green lentils

    1 large beet, peeled and cut into thin strips

    1 red apple, cored and thinly sliced

    1/2 cup (125 mL) pumpkin seeds

    2 cups (500 mL) arugula

    1/2 cup (125 mL) shredded basil leaves

    1/2 cup (125 ml) Goat’s cheese


Directions

  1. Whisk dressing ingredients together in a small bowl. Set aside.
  2. Combine lentils, beet, apple, and pumpkin seeds in a large bowl. Stir together well. Add arugula and basil. Stir in the dressing and toss until everything is incorporated. Scatter the Goat’s cheese on top. Serve immediately.
