    1 Tbsp (15 mL) olive oil

    1 onion, diced

    1 cup (250 mL) carrots, diced

    1 cup (250 mL) mushrooms, diced

    2 garlic cloves, minced

    1 tsp (5 mL) paprika

    1 tsp (5 mL) cumin

    1 tsp (5 mL) chili powder

    5 cups (1.25 L) vegetable or chicken broth

    1 1/2 cups (375 mL) barbecue sauce, divided

    2 cups (250 mL) green lentils

    to taste, salt and pepper


Directions

  1. Heat the olive oil over medium heat.
  2. Add the onion, carrots, mushrooms, garlic, paprika, cumin, and chili powder. Stir and cook until vegetables begin to soften.
  3. Add the broth and 1 cup (250 mL) of barbecue sauce to the pan. Bring to a boil. Add the rinsed lentils and bring to a boil.
  4. Reduce heat to a simmer. Cover and cook for 18-25 minutes until lentils are cooked through and soft. Check lentils periodically and add more liquid if needed.
  5. Uncover the lentils and stir in the remaining barbecue sauce. Season with salt and pepper if needed.
