Directions

  1. Preheat oven to 375˚F (190˚). Add butter to a 10 inch (25 cm) cast iron skillet or square baking dish and place in the oven to melt. Remove from oven and use a pastry brush to cover sides and bottom with melted butter.
  2. Add milk, flour, 1/2 cup (125 mL) sugar, lentils, eggs, vanilla, and salt to a blender and beat on high for 1 minute until smooth. Pour batter into the prepared pan and scatter blueberries on top. Sprinkle with remaining 2 Tbsp (30 mL) granulated sugar.
  3. Bake for 35-40 minutes, until top is puffed and golden brown. Let cool on a wire rack for 5 minutes before serving.

Use any fruits that are in season such as raspberries, cherries, blackberries, peaches, nectarines, or apricots.

1/2 cup + 2 Tbsp (155 mL) granulated sugar

1/2 cup (125 mL) cooked split red lentils

3 large eggs

2 tsp (10 mL) vanilla

1/2 tsp (2 mL) salt

1 cup (250 mL) fresh berries
