Directions

  1. In the bowl of a food processor add lentils, shrimp, pork, chives, ginger, garlic, dark soy sauce, and cornstarch, and pulse until a semi-smooth paste is formed.
  2. Shape the blend into evenly sized meatballs and set aside on a sheet tray to rest for 15 minutes.
  3. In a frying pan with a small amount of oil, shallow fry the meatballs until browned on all sides. Set aside.
  4. Use a small amount of water to deglaze the pan and reserve this liquid for later.
  5. In a sauce pot, add stock, hoisin, lemongrass, mushrooms, and low-sodium soy sauce. Bring to a simmer. Add reserved liquid and meatballs to the sauce pot.
  6. Gently simmer for 10 minutes then remove from heat and serve, or hold warm until service.

1 pound (500 g) whole red lentils, cooked and drained well

1 pound (500 g) raw shrimp, peeled, deveined, tails removed

1 pound (500 g) ground pork

¼ cup (60 mL) chives, minced

2 Tbsp (30 mL) ginger, minced

2 Tbsp (30 mL) garlic, minced

2 Tbsp (30 mL) dark soy sauce

2 Tbsp (30 mL) cornstarch

canola oil, for shallow frying as needed

3 quarts (3 L) low-sodium beef stock

2 Tbsp (30 mL) hoisin sauce

2 lemongrass stalks, thinly sliced

2 Tbsp (30 mL) low-sodium soy sauce

¼ cup (60 mL) dried shiitake mushrooms
