    2 Tbsp (30 mL) extra virgin olive oil

    2 cups (500 mL) yellow onion, sliced thin

    1 tsp (5 mL) honey

    1 tsp (5 mL) kosher salt

    1 Tbsp (15mL) garlic, minced

    2 Tbsp (30 mL) thyme leaves, fresh

    1 cup (250 mL) Monterey jack cheese, grated

    ½ cup (125 mL) sharp cheddar cheese, grated

    2 cups (500 mL) whole red lentils, cooked and drained well

    2 Tbsp (30 mL) balsamic vinegar

    2 sheets of frozen puff pastry, thawed

    2 eggs, beaten

    2 Tbsp (30 mL) everything bagel spice

    1 Tbsp (30 mL) oregano, fresh, leaves picked


Directions

  1. Preheat an oven to 425°F (220°C).
  2. In a sauté pan, heat oil over medium-high heat and sauté the onions, honey, and salt for approximately 12-15 minutes until onions are golden. Add garlic and thyme and cook for an additional 2 minutes. Remove from heat and set aside.
  3. In a mixing bowl, combine lentils with balsamic vinegar.
  4. On a cold, floured surface, gently roll puff pastry out. Cut each sheet into five equal rectangles and place onto a sheet tray lined with parchment paper. Top each rectangle evenly with onions, and both types of cheese, then top with lentils.
  5. Fold pastry edges inward to create a crust. Brush edges with beaten egg, and sprinkle with bagel spice. Bake for 17-23 minutes or until the crust is golden. Top with fresh oregano to finish.
