Directions

  1. In a large mixing bowl, combine lentils, tomatoes, avocado, corn, onion, peppers, and cilantro. Toss well to combine.
  2. In a small mixing bowl, combine lime juice, oil, and vinegar.
  3. Dress the salad and toss well before serving. Store refrigerated.

1 ½ lbs (750 g) whole red lentils, cooked

2 cups (500 mL) Roma tomatoes, small dice

2 cups (500 mL) avocado, diced

1 ½ cups (375 mL) sweet corn kernels

½ cup (125 mL) red onion, minced

1 cup (250 mL) red bell pepper, small dice

¼ cup (60 mL) jalapeno, seeded and minced

½ cup (125 mL) cilantro, finely chopped

2 Tbsp (30 mL) lime juice

½ cup (125 mL) canola oil

2 Tbsp (30 mL) red wine vinegar
