Curried Mac & Cheese

    3 Tbsp (45 mL) unsalted butter

    1 cup (250 mL) yellow onion, minced

    2 Tbsp (30 mL) garlic, minced

    1 Tbsp (15 mL) ginger, grated

    3 Tbsp (45 mL) all-purpose flour

    1 Tbsp (15 mL) garam masala

    1 tsp (5 mL) curry powder

    1 tsp (5 mL) nutmeg

    1 tsp (5 mL) paprika

    1 quart (1 L) coconut milk

    2 cups (500 mL) whole red lentils, cooked and chilled

    1 cup (250 mL) cheddar cheese, shredded

    1 cup (250 mL) mozzarella cheese, shredded

    ½ cup (125 mL) parmesan cheese, grated

    1 lb (500 g) macaroni pasta, cooked and cooled


Directions

  1. Preheat oven to 350⁰F (180⁰C).
  2. In a large sauce pot, add butter and melt over medium to high heat. Sauté onions, garlic, and ginger until onions begin to color.
  3. Add flour, garam masala, curry powder, nutmeg, and paprika and stir well until a smooth roux forms.
  4. While whisking, begin to pour in the coconut milk and cook until it slightly thickens, approximately 5 minutes.
  5. Add lentils, ½ cup (125 mL) cheddar cheese, and ½ cup (125 mL) mozzarella cheese and stir until the cheese is fully melted.
  6. Add pasta to the sauce and transfer to a hotel pan. Top with remaining cheese. Bake for 25 minutes until the cheese is golden and bubbling.
