    1 Tbsp (15 mL) coconut oil

    ¾ cup (175 mL) finely diced onion

    1 Tbsp (15 mL) minced fresh ginger

    ¾ cup (180 mL) green lentils, rinsed

    ¾ cup (180 mL) dry pearl barley, rinsed

    1 1/4 cups (300 mL) vegetable stock

    1 can (14oz/498 mL) reduced-fat coconut milk

    1 lime, zest & juice

    2 Tbsp (30 mL) chopped fresh cilantro (reserve some for garnish)

    1⁄3 cup (75 mL) toasted unsweetened coconut flakes (reserve some for garnish)

    ½ tsp (2 mL) salt

    ½ tsp (2 mL) pepper


Directions

  1. Press “sauté” button on Instant Pot and add coconut oil. Once the oil has melted, add the onion and ginger. Cook, stirring often, until onion has softened, 3-5 minutes.
  2. Add lentils, barley, vegetable stock, and coconut milk. Stir to combine.
  3. Press cancel to stop the sauté function, seal the lid, then set to cook on HIGH pressure for 15 minutes. (It will take about 5 minutes for the pressure to build, then the timer will begin.) Once the timer has stopped, let the pressure release naturally for 10 minutes, then vent to release the pressure completely.
  4. Open the lid and stir in the lime juice and zest, cilantro, and coconut flakes. Season with salt and pepper. Portion and garnish with additional cilantro and coconut flakes.
