Instant Pot Smoky Turkey Lentil Chili

    1 Tbsp (15 mL) olive oil

    2.2 lb (1 kg) ground turkey

    1 large onion, diced

    3 garlic cloves, minced

    2 cups (500 mL) chicken or turkey stock

    2 cups (500 mL) water

    2 (28 oz/796 mL) cans diced tomatoes

    1 1/2 cups (375 mL) green lentils

    1 (1.4 oz/40 g) pkg chili seasoning

    2 tsp (10 mL) cinnamon

    2 tsp (10 mL) garlic powder

    1 tsp (5 mL) smoked paprika

    half (7 oz/148 mL) can chipotle peppers in adobo sauce, diced (optional)

    1 (14 oz/398 mL) can black beans, rinsed and drained

    1 (14 oz/398 mL) can refried beans

    2 cups (500 mL) fresh, frozen, or canned corn

    to taste, salt and pepper


Directions

  1. Press “sauté” button on Instant Pot and add olive oil. Once hot, add turkey, onion, and garlic and brown for 5-7 minutes.
  2. Pour in stock and scrape any browned bits from the bottom of the pot. Stir in water, tomatoes, lentils, chili seasoning, spices, and chipotle peppers.
  3. Press cancel to stop the sauté function, seal the lid, then set to cook on HIGH pressure for 15 minutes. (It will take about 15 minutes for the pressure to build, then the timer will begin.) Once the timer has stopped, turn to vent to release the pressure completely before opening the lid.
  4. Add black beans, refried beans, and corn. Heat for an additional 5 minutes. Season to taste with salt and pepper and serve.
