    8 oz (250 g) bacon, raw

    2 cups (500 mL) yellow onion, small dice

    1 cup (250 mL) okra, thinly sliced into wheels

    2 Tbsp (30 mL) garlic, minced

    3 cups (750 mL) whole red lentils, cooked

    3 cups (750 mL) corn kernels, frozen

    2 tsp (10 mL) kosher salt

    1 tsp (5 mL) ground black pepper

    2 cups (500 mL) cherry tomatoes, halved

    ¼ cup (60 mL) fresh oregano, picked


Directions

  1. In a large skillet over medium heat, cook bacon until crispy. Remove from pan and set aside to crumble, reserving the fat drippings in the pan.
  2. Add onion, okra, and garlic to pan and sauté until onion is translucent, approximately 5-8 minutes.
  3. Fold in lentils, corn, salt, and pepper. Cook until corn has heated through and mix well.
  4. Remove from heat and stir tomatoes, reserved bacon crumbles, and garnish with oregano. Serve immediately.
