Lentils and tofu are marinated in peri peri sauce and tossed with edamame, carrots, red onion, spinach, green onion, and a sesame ginger vinaigrette and wrapped inside a warm whole wheat tortilla.

Directions

  1. In a large mixing bowl, whisk yogurt and peri peri sauce together to create a smooth crema. Add lentils and tofu and toss to coat evenly.
  2. In a separate bowl, toss edamame, carrots, red onion, spinach, and green onion with vinaigrette.
  3. To build the wraps, place a warmed tortilla on a cutting board and add the coated lentil and tofu mix and top with dressed vegetables. Wrap and serve.

Ingredients

1 cup (250 mL) Greek yogurt, plain, non-fat

1 cup (250 mL) peri peri sauce

1 ½ lb (750 g) whole red lentils, cooked

1 lb (500 g) firm tofu, seared, small dice

2 cups (500 mL) edamame, cooked and chilled

2 cups (500 mL) carrots, raw, grated

1 cup (250 mL) sliced red onions

2 cups (500 mL) spinach leaves

½ cup (125 mL) green onions, thinly sliced

3 Tbsp (45 mL) sesame ginger vinaigrette

10 extra-large whole wheat tortillas
