3 Tbsp (45 mL) canola oil
3 Tbsp (45 mL) tomato paste
2 tsp (10 mL) dried oregano
1 tsp (5 mL) dried basil
2 cups (500 mL) cooked split red lentils
2 garlic cloves
2 Tbsp (30 mL) lemon juice
2 Tbsp (30 mL) hot water
¼ cup (60 mL) grated Parmesan cheese (reserve some for garnish)
to taste, salt and pepper
1 Tbsp (15 mL) chopped fresh basil
