Sweet Cinnamon & Cardamom Spiced Lentils

    ¾ cup (175 mL) split red lentils

    ½ tsp (2 mL) ground ginger

    ½ tsp (2 mL) ground cinnamon

    ¼ tsp (1 mL) ground cardamom

    2 ¼ cups (560 mL) light coconut milk or water

    2 Tbsp (30 mL) honey (optional)

    to taste, salt


Directions

  1. Combine lentils with the spices and liquid. For sweetness, optionally stir in honey. Be sure to use a large enough saucepan as the lentils will double in size.
  2. Bring to a boil, cover tightly with a lid, reduce heat and simmer for 5-7 minutes or until the lentils are tender. Stir often. Season with a touch of salt.

(Optional) Tasty Preparation Tips:
-Add dried or fresh fruit, toasted nuts, or seeds to enhance the texture and flavour of this dish
-Stir into prepared oatmeal for a fibre and protein boost at breakfast
-Chill and blend into your favourite morning smoothie
-Cool, puree, and add to baked goods
-Cool and blend with dried fruit, nuts, seeds, and coconut oil to make a chilled energy bar
