Lentils and steamed spinach relish in the acidic and nutty notes of the toasted sesame seed dressing, making this dish wonderful served warm or cold. Pair with your favourite sushi roll or simply on its own.
1/3 cup (75 mL) white sesame seeds, unroasted
3 Tbsp (45 mL) seasoned rice vinegar
3 Tbsp (45 mL) low-sodium soy sauce
1 tsp (5 mL) honey
1 lb (500 g) baby spinach, washed
1 1/2 cups (375 mL) cooked green lentils
This dish can be served warm or cold. Accompany with your favourite sushi or fish.
