    5 cups (1.25 L) whole red lentils, cooked

    10 cups (2.5 L) mixed salad greens, washed

    10 cups (2.5 L) cherry tomatoes, oven blistered

    5 cups (1.25 L) English cucumbers, sliced

    2 ½ cups (625 mL) pecans, roughly chopped

    5 avocados, medium diced

    20 oz (600 g) crispy bacon crumbles

    20 oz (600 mL) cilantro lime dressing


Directions

  1. To plate this dish, prepare a base of rice, lentils, and mixed greens.
  2. Top with tomatoes, cucumbers, pecans, and avocado.
