Plant-Based Biscuits & Gravy

Your favorite comforting biscuits and gravy, but plant-based (but you would never know it), utilizing a "meaty" blend of lentils, roasted and chopped mushrooms, and walnuts (or seeds), with thyme, fennel, and sage.

    ½ lb (250 g) whole red lentils, cooked

    ½ lb (250 g) mushrooms, roasted and minced

    ½ lb (250 g) walnuts, minced

    2 tsp (10 mL) fresh thyme leaves, minced

    1 tsp (5 mL) fennel seeds, minced

    1 Tbsp (15 mL) sage leaves, minced

    2 tsp (10 mL) kosher salt

    1 tsp (5 mL) black pepper, fine ground

    2 Tbsp (30 mL) extra virgin olive oil

    ⅓ cup (75 mL) all-purpose flour

    4 cups (1 L) whole milk

    10 each buttermilk biscuits, warmed


Directions

  1. In a mixing bowl, blend lentils, mushrooms, walnuts, thyme, fennel, sage, salt, and pepper.
  2. In a heavy-bottomed rondeau, over medium heat, add oil and the lentil crumble mixture. Cook and brown the mixture for 4-5 minutes.
  3. Sprinkle half the flour and mix so the crumble absorbs it all, then add the remaining flour little by little, stirring constantly. Cook for 2-3 minutes.
  4. Add milk and stir well until the mixture thickens, roughly 8-10 minutes. Adjust thickness with additional milk as desired.
  5. Adjust seasoning as needed. Serve hot over a biscuit.
