    2 Tbsp (30 mL) canola oil

    1 lb (500 g) beef, top round, small dice

    ½ cup (125 mL) yellow onion, small dice

    ¼ cup (60 mL) garlic, minced

    ¼ cup (60 mL) parsley, roughly chopped

    ¼ lb (125 g) carrots, small dice

    ¼ lb (125 g) potatoes, peeled and small dice

    ½ cup (125 mL) cashew butter

    1 cup (250 mL) tomato, medium dice

    1 ½ quart (1.5 L) beef stock

    ½ Tbsp (7 mL) paprika

    ½ lb (250 g) whole red lentils, dry

    10 cups (2.5 L) crinkle cut French fries, cooked

    1 cup (250 mL) cheese curds

    ¼ cup (60 mL) oregano, picked leaves


Directions

  1. In a heavy bottomed pot with a lid, over medium to high heat, add oil. Brown beef on all sides, and set aside.
  2. In the same pan, add onion, garlic, parsley, carrots, and potatoes and sauté for 10 minutes. Add cashew butter, tomatoes, 3 cups (750 mL) stock, and paprika.
  3. Return the browned beef to the pot and add the lentils. Add the remaining stock to cover and reduce it to simmer.
  4. Cook the stew for 30 minutes.
  5. To serve, place 1 cup (250 mL) fries onto a serving plate and top with cheese curds and 1 cup (250 mL) of stew. Garnish with oregano. Serve hot.
