    1 lb (500 g) whole red lentils, cooked

    1 lb (500 g) extra firm tofu, crumbled

    ¼ cup (60 mL) low-sodium soy sauce

    ¼ cup (60 mL) tomato paste

    2 Tbsp (30 mL) sundried tomato, minced

    1 Tbsp (15 mL) garlic powder

    1 Tbsp (15 mL) smoked paprika

    1 Tbsp (15 mL) apple cider vinegar

    1 Tbsp (15 mL) maple syrup


Directions

  1. Preheat oven to 400⁰F (200⁰C).
  2. In a large mixing bowl, combine all ingredients and toss well to evenly blend.
  3. Pour mixture onto a lined sheet tray and bake for 15 minutes. Remove and sauté in a hot skillet for approximately 5 minutes to reach desired texture.
  4. Allow to cool slightly before consuming or store for up to 1 week in a refrigerator.
