Indian Lettuce Wraps

Lentils and paneer are sauteed with garlic and ginger and added to eggplant, green onion, and curry seasoning, served on top of lettuce leaves.

    2 Tbsp (30 mL) canola oil

    1 lb (500 g) whole red lentils, cooked

    1 lb (500 g) crumbled paneer

    2 garlic cloves, minced

    1 Tbsp (15 mL) fresh ginger, finely grated

    1 cup (250 mL) eggplant, diced small

    6 green onions, ends trimmed, finely chopped

    1 cup (250 mL) tikka masala curry

    ½ cup (125 mL) green peas, cooked and shocked (or frozen and thawed)

    1 tsp (5 mL) salt

    20 iceberg lettuce leaves, washed and dried


Directions

  1. Heat oil in a large frying pan over medium-high heat. Add lentils and paneer. Cook, stirring with a wooden spoon to break up any lumps, for 5 minutes. Add garlic and ginger and cook, stirring, for 1 minute or until fragrant.
  2. Add eggplant, green onions, and curry, stirring for 1 minute or until combined. Bring to a simmer and cook undisturbed for 5 minutes. Remove from heat. Add peas and transfer to a serving bowl.
  3. Place lettuce leaves cup-side up on a serving platter and serve immediately with the paneer and lentil mixture.
