Simple Lentil Hummus

A very simple lentil hummus comes together by pureeing lentils with lemon juice, garlic, salt, tahini, cumin, and canola oil.

    ¼ cup (60 mL) lemon juice

    1 Tbsp (15 mL) garlic, roughly chopped

    1 ½ tsp (7 mL) salt

    ½ cup (125 mL) tahini

    ¼ cup (60 mL) ice water

    2 cups (500 mL) whole red lentils, cooked and drained well

    1 tsp (5 mL) cumin

    2 Tbsp (30 mL) canola oil


Directions

  1. In a food processor add lemon juice, garlic, and salt. Process until the garlic is very finely chopped. Let the mixture rest for approximately 10 minutes or more to allow the garlic flavor to mellow.
  2. Add tahini and blend until thick and creamy, scraping down the processor as necessary.
  3. Add water as necessary to adjust consistency.
  4. Add lentils and cumin. While processing, drizzle in the oil. Blend until smooth and adjust seasoning necessary with lemon juice, salt, or water.
